Easy & Delicious Pulled Pork Tacos September 29, 2011
Do you have food trucks in your town? There’s one in our area, that showed up about a month ago, serving nothing but tacos. Very simple. No cheese, lettuce or tomatoes. Just salsa. Nothing fried. Mr. Wonderful and I love tacos! And the tacos from this food truck were simply delicious! The line of customers agreed with us.
Well, they disappeared a couple of days ago, so I proudly recreated just about the same exact taco. Maybe even better. No muss, no fuss. Easy-peasy excellent and I think kids would love it too. Sorry…no pictures! Here’s how…
In the morning, submerge a boneless pork butt into chicken broth, in a CROCKPOT, with a teaspoon of cayenne, some salt and a couple cloves of garlic or garlic powder…and a roughly chopped medium onion. Cook it on low all day long. Around 5:00, remove the tender meat from the crockpot and discard the liquid. (you could probably make soup with the broth, but I didn’t) Setting the meat on a cutting board, remove any visible fat. This is very simple to do. Toss the fat, shred the pork and set aside while you warm corn tortillas on a lightly oiled griddle. Warm the tortillas through, top with the pork, a few chunks of avocado and salsa and you will be in Taco Heaven. I didn’t even bother to make a salad…lazy bum!
