Banana Sour Dough French Toast September 4, 2012
Well, here we are. Day 5 of a wonderful week at Lake Tahoe. The weather couldn’t be better.
This morning, I’m proud to say that I was quite resourceful, creating a breakfast masterpiece!
Is it the mountain air that feeds my voracious appetite? Or it simply a case of the piggies? Either way, it was delicious! Being near the end of our get-away, I had the perfect ingredients on hand.
One Serving:
One, 1 inch thick piece of sour dough bread
1 egg blended with a fork and two tablespoons of water, because there was no milk.
Soak the bread in the egg as long as possible, preferably overnight.
Heat 2 tablespoons of vegetable oil in a skillet, at medium high.
While the pan is heating, smash a half of a very ripe banana and spread mashed banana on top of one side of egg soaked bread.
Place bread in pan, banana side on top.
Heat until golden brown, about 4 minutes per side, or until heated through.
Serve with butter and maple syrup. If you don’t like this, email me and I’ll give you your money back! 🙂
Actually, I’m just kidding about the refund, but you should love this if you love French toast and banana.
